The avocado toast 🥑is big in our house and it’s so simple to make. When done right✔️, they’re deliciously satisfying & of course, highly nutritious.
There is also something very satisfying 😌about getting your poached eggs 🥚cooked perfectly. The key is adding vinegar to your almost boiling water before cooking💁♀️
Avocados are packed with heart healthy❤️ fat and tons of vitamins & minerals. A recent study found that people who ate avocado🥑 daily, had more gut microbes that break down fiber and produce metabolites that support gut health! 👏👏
The other rockstar 🤘on this dish is the broccoli sprouts 🥦. These contain high level of glucoraphanin, which the body converts into sulforaphane. This potent ⚡️ compound protects your cells against inflammation and a wide variety of diseases!!🤯

Here’s what you’ll need:
- Bread of choice, toasted (I used good quality sourdough)
- 1 large avocado or 2 small
- 1 tsp red pepper flake
- 1 poached egg
- Handful broccoli sprouts (washed and patted dry)
- Edible flowers (optional)
- Salt & pepper to taste
- 1 tsp lemon juice & est
Directions:
- Assemble first toast by mashing 1/2 avocado with salt, pepper & lemon juice and zest. Spread 1/2 of this mixture on toast and top with sliced avocado. Add salt and additional zest to taste then edible flowers.
- Assemble second toast by adding remaining mash mixture, then top with broccoli sprouts, peached egg and red pepper flakes. Enjoy!
