Coconut Cranberry Protein Bites

These coconut cranberry bites are a great snack when you’re on the go, running 🏃‍♀️ between meetings or post workout to refuel 🏋️‍♀️

They are easy to make and are deliciously satisfying🤤

These gems are packed with omega 3 fats that help reduce inflammation👏, gut loving fiber and plant 🌱 based protein 💪They’re also gluten free and suitable for those with celiac disease or gluten sensitivities 🙋‍♀️

Here’s what you’ll need:

Yields: 12 servings

  • 1/4 cup gluten free oats
  • 3 1/2 tablespoons oat flour (I just blended oats)
  • 3 1/2 tablespoons protein (I used Ayurvedic pro – use discount code SARAH for 20% off)
  • 3 1/2 tablespoons ground flax
  • 1 3/4 tablespoons chia seeds
  • 3 1/2 tablespoons maple syrup
  • 1/4 cup peanut butter
  • Almond milk (if needed for consistency)
  • Coconut flakes to coat

Directions:

  1. Mix all ingredients except for coconut flakes and craneberries.
  2. Fold cranberries into “dough”.
  3. Roll into 2″ balls and coat with coconut flakes.
  4. Refrigerate for at least 30 minutes. Store in an airtight container in the refrigerator.

Enjoy!
