Gut Friendly Cranberry Yogurt Parfait

Store bought yogurts often times have a tremendous amount of added sugars, which when eaten excessively, can lead to a disruption in gut microbiome balance. Making chia jam is a great way to control how much added sugar you are consuming while still satisfying your sweet cravings.
This parfait is made with my favorite chia jam using tart & festive cranberries!
Cranberries are rich in the antioxidants anthocyanins and flavanols, which contribute to their anti-inflammatory properties (& gorge color)
Cranberries are also unique in that they contain A-type proanthocyanidins, which have been linked to decreasing bad bacteria and promoting urinary and gut health.
To give this jam a gel like texture, chia seeds were used as a thickener. Chia seeds contain prebiotics, which help feed the beneficial flora in the gut microbiome and help them thrive!
The yogurt used in the recipe contains live active cultures, which is another way of describing probiotics! Probiotics have been widely studied for their benefits on gut & immune health (+ more)!
Here’s what you’ll need:
- 1 cup cranberries
- 2 tablespoons chia seeds
- 1/2 cup water
- 1-2 tablespoons maple syrup
- 1 cup yogurt with live active cultures (I used organic plain greek)
- Unsweetened coconut flakes to garnish
Directions:
- Heat all ingredients for jam in a saucepan until cranberries burst and the mixture has a jam like consistency (5-6 minutes). Transfer to a glass jar and refrigerate until cool. Layer jam with yogurt and top with coconut flakes. Enjoy!
